【Tristan】There are some things I miss about the South, though.

【Mary】Like?

【Tristan】Uh, definitely Southern food.

【Mary】Oh yeah. I miss the barbeque. (laughs)

【Tristan】The food culture is very different in the Midwest. They eat very different food. I guess different groups of people live in the Midwest than live in the South. There are a lot more Germans and Dutch in the Midwest and the South has a lot more English and Irish.

【Mary】Yeah.

【Tristan】But I—I guess the thing I miss the most is the barbeque and that’s…really everywhere we’ve lived outside the South I’ve missed barbeque because it’s pretty unique to the South.

【Mary】Right. Remember we lived in Korea, and there was, like one place that had pulled pork barbeque and it was kind of mediocre? But we ate it anyway. (laughs)

【Tristan】Right. Once you haven’t had it for a long time, you’re willing to eat anything. But the best barbeque’s definitely in the South, and when you live in North Carolina, they have so many different varieties because it’s so popular there.
You can go to the east or go to the west, or Lexington style, whether it’s vinegar-based or tomato-based, all different kinds of sauces.

【Mary】Yeah. So that’s one thing, like, when you travel around the US, people will have different ideas about what barbeque is. Like, in Texas, I noticed it’s just anything cooked on a grill.
Like a hot dog, or a steak, or anything they might consider that “barbeque.” And there’s a lot more beef brisket…

【Tristan】Right.

【Mary】…in Texas. And then in New York…I can’t even talk about it. It was so disappointing.

【Tristan】(laughs)

【Mary】But…(laughs)

【Tristan】It’s dry. The sauce isn’t very good. But really I guess in North Carolina, which for me will always be real barbeque because it is where I’m from.

【Mary】It is our home.

【Tristan】But it was—it was always slow roasted pulled pork. So they might cook it overnight, cook it for hours and hours in a slow cooker, and then pulled pork put on a sandwich, or just on a plate. You get half a pound of pulled pork with the sauce that’s…

【Mary】Right. So, like North Carolina’s famous for barbeque because of the pork, but also the different sauces. So, like what are the different styles of sauce?

【Tristan】There’s Lexington style. You—well, like I said before, you can get vinegar-based sauce, or tomato-based sauce, and then you’ve got Carolina gold, which is mustard based sauce. But really it’s…lots of people take sides and they have big opinions about it, but I think it’s all great.

【Mary】Are you the tomato, or the vinegar?

【Tristan】(laughs) Tomato-based sauce is definitely my favorite.

【Mary】I definitely go for vinegar, which is less popular outside…outside the area.

【Tristan】Right.

【Mary】Can’t find it anyway other than North Carolina.

North Carolina is famous for the variety of sauces used in its barbeque food. The two main sauces Tristan and Mary discuss in this episode are tomato-based and vinegar-based sauces. Tristan prefers tomato-based sauces, and Mary prefers vinegar-based, which she says she has been unable to find outside of North Carolina.

Phrases of the day（今日のフレーズ）

1) Miss（〜が恋しい）

Missは、お気に入りの場所や食べ物などを「恋しく思う」「懐かしく思う」という意味の動詞です。アメリカ人の日常会話ではよく使われる表現の一つで、 missの後にその対象が入ります。
「I miss you.」のように missの対象が人の場合、「会えなくて寂しい」というニュアンスになり、家族や恋人、友人などが遠く離れた場所にいる時によく使われます。

2) Southern food（南部料理）

典型的なアメリカの食べ物と言えば、ハンバーガーやホットドッグを思い浮かべる人も多いと思いますが、アメリカ南部に行くと Southern food（南部料理）が一般的です。　Southern foodは昔からある伝統料理で、ステーキではなく主に鶏肉や豚肉を使います。フライドチキンやプルドポーク、グリッツやコーンブレッドなどが代表的な Southern foodです。アメリカでは Southern comfort foodとも呼ばれます。

3) Mediocre（あまり良くない）

Mediocreはラテン語で middleを意味し、質や技能が良くも悪くもなく、まあまあであることを表す時に使われます。どちらかと言うとマイナスの意味で使われることが多く、　mediocre singerは「二流の歌手」、 do a mediocre jobは「中途半端な仕事をする」のような意味合いになります。

4) Overnight（一晩中）

Overnightは「一晩中」や「夜通し」を意味する単語です。今日の会話でトリスタンが cook it overnightと言いましたが、これは、プルドポークを一晩中煮ることを意味しています。

• その他、一夜で有名になったり成功したりする状況において、 「突然」や「急に」という意味でも使われます。

Take sidesは、二者の間で意見が分かれた時などに、どちらかの味方につき、そちらを支持することを意味します。
